This is dish a friend of mine made for me in college and has been my go to comfort food.
It sounds weird, looks weirder, but tastes superb.
Imagine chowder with ginger chicken.



Ingredients (serves 2 - 3)
  • 2 Chicken breasts
  • Fresh ginger root, you need about an 1 inch cube.
  • 2 Cloves of garlic
  • 1 Can of cream of corn, sweet kernels ( I use Del Monte from the canned goods aisle)
  • 2 cups of rice

Start with putting your rice on, I sometimes make fried rice but works with boiled rice just as well.
Slice the chicken breast into thin cross sectional slices, about 1/8 of an inch.
Season with a little salt, and a bunch of fresh black pepper, pepper and ginger should be prominent in the taste.
Peal and chop the ginger into 3x3 mm (1/8th inch) cubes, & crush your garlic.

In a pan or a wok if you have one, heat up some olive oil on medium and start frying the garlic and ginger.
Give it just a minute and add your chicken and fry off the chicken, don’t let it brown.
Once the chicken is cooked add the entire cream of corn, fill half the can with water and add that to the wok as well.
And let it simmer for about 10 covered, remove the cover and allow it to reduce until you have a consistency that coats
the back of a spoon. You should be able to cover the back of a spoon, run your finger through it and it should hold that streak.

Serve on your rice for an amazing comfort food special
