This is a crock pot special I discovered one day, ok make that 2 days due to an accident.
I prepped everything in the morning, put it all in the crock pot, went to work lusciously licking my lips
in anticipation for slow cooked ribs… Until I came home and realized I forgot to plug the damn thing in.
So the next morning I cooked it, and oh boy was it good.
Ingredients
- 4 Short ribs, bone in & nicely marbled
- 2 Cloves of crushed garlic,
- 1/4 onion diced or onion powder.
- A dash of garlic powder
- A glass of red wine, I like a good Malbec
- Side dish of steam vegetables
- A side of Polenta, sun dried tomato flavored is my favorite
- And the secret sauce is Peter Luger Steak House Old Fashioned Sauce ( Find at Harris Teether butcher section)
Prep your short rib by removing excess fat from the meat, and any rigid tissue (Silverskin) by the bone.
Silverskin is tough, if you are removing it with a knife be careful. I generally try to pull it off by hand.
Season with salt & pepper, add your garlic powder and onion powder if you have it.
Start a nice hot sauce pan, add a dash of olive oil, onions and your garlic.
Get them to a little sizzle, then add your short rib. The objective here is to start the braising process, have the outside of the
meat brown caramelize sone of the sugars and give the meat a slightly more complex flavor.
Add half the super secret sauce to the crock pot, Peter Luger Old Fashioned is not as acidic as a BBQ sauce and gives a fantastic smooth flavor
If you have time, I would let the meat sit in the fridge marinating in this after you browned it for a couple of hours.
If you don’t have the time, don’t worry it’s still amazing.
Turn the ribs on all sides ensuring they get a browning, add a little of the red wine just to mix the flavors, and more the ribs to the crock pot. Allow them to sit in the steak sauce.
Deglaze your pan with the rest of the wine, allow it to simmer down a little and pour that into the crock pot, finish off with the rest of the steak sauce, put on the lid turn it to medium / high , PLUG IT IN… and let it sit there for a good 6 - 8 hours.
About 20 mins before you serve dinner, slice your polenta and fry it in a pan until crispy.

I usually add a tbl spoon of butter, Adobo seasoning, fresh black pepper to some carrots, broccoli & cauliflower.
Plate & eat, all going well you’ll end up with an insanely decadent braised short rib dish, that is fall off the bone.
The meat will slip and slide off the bone, it’s crazy. I add a little rustic bread something a little nutty & brown works well
to soak up the flavors.
Just enjoy, maybe finish that bottle of wine you opened too ;-)
