Having been three years since I left the West coast I started having cravings for the amazing ‘secret’ menu from In-N-Out Burgers.
Then all of a sudden a recipe for it popped up on my youtube subscriptions.
The awesome Brandi over at pop sugar published a video showing how to make it
This is an amazing sauce, that makes a simple BBQ fantastic, don’t forget to go Animal style on some fries too.
The recipe is pretty simple
For the Animal Sauce:
- 1/2 cup mayonnaise
- 1/2 cup ketchup
- 2 tablespoons dill pickles, finely chopped
- 1 teaspoon yellow mustard
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/2 teaspoon sugar
- 1 teaspoon apple cider vinegar
- 1/2 onion, diced
Finely dice the onions, and brown them off in a pan with some butter + oil over a low to medium heat.
Too hot and you’ll end up with burnt butter, too low and you’re just sweating them.
The onions give it a fantastic flavor, for me at least. If you’re not an onion person you can skip, but I would recommend against it.
Roasted garlic makes a nice substitution for nuttiness flavor but not for texture.
Reserve the now browned onions until you’re ready to serve.
Just as if you were making a thousand island dressing, mix the mayo & ketchup together,
add the mustard / salt / pepper / sugar and vinegar.
Ensure your dill pickles are finely chopped, I followed Brandi’s advice and used a squeeze bottle which I found at World Market for like 99c, and the pickles we’re just a little too big to squeeze through, so lesson learned.
Add to your sauce.
For fries and hamburgers add some basic American cheddar slices, top with your onions, and generously pour over your sauce.
Now if you’re like me, your trip to an In-N-Out comprises of Animal style Fries and Burger and milk shake, at the drive through, and then pulling into the parking lot and eat it, so you don’t have to either

The taste is just right, you still miss the environment and the milk shake, but it’s a little taste of the West coast at home.
